This recipe comes from Jennifer Meacham, our Reference & Instructional Technology Librarian! At a recent Marygrove employee event these cookies took home second place.
Triple Chocolate Cookie Bars
- 1 box (18 – 19.5 oz.) fudge brownie mix
- Vegetable oil, eggs, and water (amounts indicated for chosen brownie mix)
- 1/4 cup (1/2 stick) butter
- 1/4 cup milk
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 teaspoon vanilla
- 1 cup Oreo cookies, coarsely chopped
- 1 roll (16.5 oz.) refrigerated chocolate chip cookie dough
Pre-heat oven to 350°F. Spray a 13×9-inch baking pan with non-stick spray. Prepare brownie mix as directed on the box, with oil, water, and eggs. Spread batter evenly in pan. Bake for 25 minutes.
While brownie layer bakes, place butter, milk, both sugars, and vanilla in a medium saucepan. Place over medium heat and boil, stirring constantly. Once it starts to boil, reduce the heat to medium-low and simmer for 3 minutes, stirring occasionally. Make sure sugars are completely dissolved, and remove from heat.
Once brownies have baked, remove from the oven and immediately pour the sugar mixture over the top, spreading evenly. Sprinkle Oreo pieces on top of the brownies. Cut the cookie dough into 24 (somewhat) equal pieces and place them on top of the Oreo cookies. (Try to space them evenly; they will spread and fill in the gaps during baking.)
Bake an additional 22-25 minutes until cookie topping begins to brown. Cool 2 hours before cutting into bars.
